The other morning whilst out on a mission I stopped for a coffee of the quality I like and spotted on the specials board in the homely little cafe at the Victoria Mill in Congleton a French Onion Soup, which called out to me for myriad reasons! 

  For one, it was the weather outside, a decidedly Autumnal day, and it whispered comfort to me. For the second, it is September, and back in the past two years my lover and I had been making the preparations for our October in the wonderful city of Dijon. This year we are not going for too many reasons to mention here, and it is with huge regret and a sadness too; and perhaps for this emotional attachment alone it seems that literally everyone we know or hear of through friends of friends is going to France instead of us. Perhaps it seems that way because we are sensitive to the connection. 

  However, I do not dwell in sadness as I live in the present and well I know that Dijon lives its beautiful dynamic in our temporary absence, until such time as we can pack our belongings once more and put ourselves on the train to go there .. It is always alive in our thoughts. 

  For the meantime, close your eyes and breathe in the fragrant aroma of a home made French Onion Soup such as that nurtured in the pan by Ian Whitehouse, the chef of Michelin starred experience in his Loft Cafe at Victoria Mill ..
