Market Quarter's new street food stall proves the doubters wrong with successful start to life

A new street food stall has enjoyed a successful start to life.

El Piloto opened at Congleton Market Quarter earlier this month, serving up tacos, loaded fries and other treats.

Owner Lukas Tilzey has been overjoyed by the response they have had so far.

The 32-year-old said: "The support we've received so far by all our customers has been very moving and we just want to say thank you again, it really does mean a lot to a small independent business.

"If you haven't yet managed to visit us swing by and grab some hand pressed tacos, quesadillas, churros or whatever you fancy!"

Lukas started El Piloto a few years ago, initially as a hobby alongside his full-time job.

He soon realised it was more than a hobby, however, and last year Lukas took the plunge and decided to put all his time and effort into pursuing his dream.

"It was a scary decision as we'd just bought a house and the future was uncertain," Lukas said.

"People doubted me and questioned my choices.

"But with the top support from my partner, friends and OG family we made some amazing things happen."

In 2024, El Piloto appeared at various festivals, breweries, weddings and private events, serving up dishes from their mobile food truck.

Now, the business has a permanent home at Congleton Market Quarter, located next to R&G's Tap House.

El Piloto is described as a 'fusion of quick-serve street food inspired by international gourmet cuisine.

The menu features a range of exciting options, such as Baja fish tempura tacos, bravas fries, loaded hash browns, chimi cheese sourdough and churros.

"Our main aim is to unite people together and celebrate diversity and creativity through our food, this reflects in our ever-evolving menu," said Lukas.

"We focus on bringing the best flavours from around the world and incorporating these onto our plates, capturing the very essence of culinary innovation.

"We pride ourselves on creating homemade recipes which are led by locally sourced quality ingredients, from our homemade corn tortillas to our sauces and pickles."
