Congleton Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature, including classics, reinventions of familiar favourites and some crazy concoctions unique to Nub News.

This week, Josh is bringing you a fruity little number in honour of Valentine's Day. This is the Valentini.

Ingredients: 

• 50ml cranberry juice
• 25ml vodka
• 25ml amaretto
• dash of lemon juice
• egg white or 25ml aqua faba (the juice from a can of chickpeas, a great vegan alternative!

Method:

1. add all of your ingredients to a shaker and dry shake to get a nice foam
2. add ice and shake over ice until chilled
3. strain into a tumbler, over ice if you prefer
