Cocktail of the Week: Mermaid Punch
Congleton Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature, including classics, reinventions of familiar favourites and some crazy concoctions unique to Nub News.
This week, Josh is bringing you a vibrant cocktail with a fruity backbone, and plenty of punch!
Ingredients:
- 25ml blue curaçao
- 25ml spiced rum
- 25ml pineapple juice
- a drizzle of cherry syrup - syrup from a jar of cocktail cherries works well
- egg white or 25ml aqua faba to keep it vegan - the justice from a can of chickpeas
- top up with lemonade
Method:
- add all of the alcohol and egg whites/aqua faba to a shaker
- shake hard for 20 seconds
- add ice
- shake for another 20 seconds
- strain into a tumbler and top up with lemonade
- drizzle the cherry syrup and decorate with a cherry for an extra indulgent tipple
