Cocktail of the Week: Mermaid Punch

Congleton Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature, including classics, reinventions of familiar favourites and some crazy concoctions unique to Nub News.

This week, Josh is bringing you a vibrant cocktail with a fruity backbone, and plenty of punch!

Ingredients: 

  • 25ml blue curaçao
  • 25ml spiced rum
  • 25ml pineapple juice
  • a drizzle of cherry syrup - syrup from a jar of cocktail cherries works well
  • egg white or 25ml aqua faba to keep it vegan - the justice from a can of chickpeas
  • top up with lemonade

Method:

  1. add all of the alcohol and egg whites/aqua faba to a shaker
  2. shake hard for 20 seconds
  3. add ice
  4. shake for another 20 seconds
  5. strain into a tumbler and top up with lemonade
  6. drizzle the cherry syrup and decorate with a cherry for an extra indulgent tipple
